Ingredients:
Amount Ingredient
4 cup Ripe mango, peeled and sliced
1/2 cup Lime, *seeded and chopped
1 cup Onion, chopped
1/2 cup Fresh ginger, grated
3 x Cloves garlic, peeled and minced
3/4 cup White raisins
2 cup Light brown sugar
1 cup Apple cider vinegar
1/4 cup Fresh orange juice
1/4 cup Fresh lemon juice
1 tbl Mustard seed
1 tsp Crushed red pepper, * see note
1 tsp Ground cinnamon
Instructions:
Instructions: Makes 4 half-pints.

Place all ingredients in heavy pot over medium heat. Bring to a boil. Lower heat & simmer for about 20 minutes, stirring frequently. Remove from heat, cover, & let stand for about 12 hours. Again bring to a boil, lower heat & cook for 15 minutes, stirring frequently.

Process for 15 minutes in boiling water bath.

NOTES :
* Chop lime by hand, try 1 1/2 teaspoon hab powder
