1 tbl Olive Oil
1 lb Chicken breasts, boneless, skinless, cubed. (may use canned)
1/4 cup Onion, chopped
1 cup Chicken broth
1 can 4 oz green chilies, chopped
1 tsp Garlic powder
1 tsp Cumin
1/2 tsp Oregano leaves
1/2 tsp Cilantro leaves
1/8 tsp Ground red pepper
1 can 16 oz or larger white Kidney beans (or any white bean)
6 oz Monterey Jack cheese, shredded
Instructions:
Instructions: Heat olive oil in a 2 quart saucepan over med-high heat. Add chicken and cook 4 to 5 minutes, stirring often. Remove chicken with slotted spoon, cover and keep warm. Add chopped onion to saucepan and cook 2 minutes, stir in chicken broth, green chilies and spices, simmer for 10 minutes. Stir in chicken and beans and simmer for 10 minutes. Garnish with cheese and onions.

Serves 2 to 4.
As an option, cook the chicken and the onions and then dump everything else, except beans and cheese into a crockpot. Simmer for at least 30 minutes, add the beans. If you smash a few they will thicken the chili.
