1 lb large white dry Beans (they generally use Great Northern)
6 cup Chicken Broth or Bouillon
2 med yellow Onions, chopped
1 x 8 ox. can chopped Green Chilies
2 tsp Cumin
1/4 tsp Garlic Powder
1/2 tsp Oregano
1/4 tsp White Pepper

Instructions:
Instructions: Rinse beans in a colander under running water, discarding any discolored beans. Then place beans in a large covered roaster and cover completely with water; allow to soak for at least 8 hours or overnight. Add remaining ingredients and oven bake at 350 degrees for a minimum of 6 hours or until beans are done to taste. Stir occasionally, adding more water or broth as needed. This white chili may also be cooked in a crock pot or simmered very slowly on top of the stove for 8 to 12 hours. Especially at high altitudes, remember to allow plenty of time to slowly simmer this soup for the best flavor and texture. For an extra special treat, you may wish to serve your Baldpate White Chili topped with shredded Monterey Jack Cheese and accompanied by everyones favorite Baldpate Cornbread. (see page 8 above)
