Ingredients:
Amount Ingredient
2 cup dried white beans (navy or cannellini) soaked in cold water overnight
1 lrg fennel bulb trimmed quartered and thinly sliced
1 sm red onion diced
1/2 cup snipped fresh dill
dressing:
2 clv garlic crushed
1/2 tsp ground sage
2 tbl fresh lemon juice
3 tbl white wine vinegar
1/2 cup olive oil
1 x salt and freshly ground pepper to taste
Instructions:
Instructions: Drain beans and put in a large pot with cold water to cover.

Simmer partially covered until tender about 45 minutes.

Drain and let cool.

In a large bowl combine beans fennel onion and dill. In a small bowl whisk all dressing ingredients together until well blended.

Taste and adjust seasoning.

Toss with bean mixture.

Sprinkle with olives and serve at room temperature.

It may look like celery and taste a bit like licorice but fennel isnt like anything else. Sliced thin and served raw everythings good about it: its crunch its spicy aroma its satisfying sweetness. Mixed with creamy fat beans and briny olives fennel only gets better especially under the influence of good olive oil.
