1/4 cup fruity olive oil
6 x garlic cloves minced
3 x plum tomatoes seeded and diced
6 cup cooked small white beans or eye of the goat beans
1/3 cup vegetable broth
5 cup spinach leaves torn into small pieces
Instructions:
Instructions: Heat the oil in a large skillet over medium heat. Add the garlic and cook 30 seconds. Stir in the tomatoes and saute, tossing often, until the tomatoes are soft, about 7 minutes.

Stir in the beans and broth and bring to a simmer. Pile on the spinach, cover the pan and cook just until spinach is wilted, about 3 minutes. Season generously with pepper. When done, the mixture should have thickened, sauce-like juices, not watery, not dry. If its too soupy, cook a few minutes more with the lid off. If too dry, add a bit more stock. -
