2 x 425 g cans cannellini beans drained (see below)
3 tbl olive oil
2 clv garlic crushed
1/2 tsp dried sage
1 x 227g can peeled tomatoes drained
Instructions:
Instructions: Rinse the beans with cold water and drain.

Heat the oil garlic and sage together gently in a saucepan for 1 to 2 minutes then stir in the beans.

Press the tomatoes through a sieve into the pan.

Add salt and pepper to taste and stir gently.

Cover and simmer for 10 minutes.

Serve hot as a vegetable or cold topped with tuna fish as an antipasto.

Serves 4

Note: If cannellini beans are unobtainable cover 175g dried haricot beans with boiling water and soak overnight. Next day simmer gently for 1 1/2 to 2 hours until tender drain and use as above
