1/2 cup flour
1/2 tsp ground white pepper
8 oz aged white cheddar cheese shredded
1/3 cup butter
1 x egg slightly beaten
Instructions:
Instructions: Preheat oven to 400. In large mixing bowl, combine flour and pepper. With pastry cutter, cut in cheese and butter until mixture resembles coarse crumbs. Stir in egg and form mixture into ball; knead until combined. Shape into a log about 7" long and 2" in diameter. Wrap log in plastic wrap and chill at least 2 hours. Cut log into 1/8" thick slices. Place slices 1" apart on ungreased baking sheet; reshape if necessary. Press pecan half on each slice. Bake 8-10 minutes, or until bottoms and edges are lightly browned. Transfer to wire rack.

Makes 40 crackers.
