Instructions: This takes a little more time than your average white sauce, but requires no butter, thickens nicely, and can be used in any recipe.
Add seasonings appropriate to your recipe. Ive used garlic and nutmeg here, but chopped shallots or onion, taragon, or other seasonings work well. [Maury] place the milk in a saucepan over medium heat. Place flour in a sieve, and add to the milk by tapping the sieve to get a fine layer of flour. Whisk the sauce to combine the flour and milk. Continue until all of the flour is added and the sauce is smooth. Add the other ingredients. Whisk over moderate head until the sauce boils. Reduce the heat and simmer (whisking continuously) for 2 minutes. Email this Recipe:
