Beat egg in a bowl, add beer and beat until smooth. Add flour and salt and beat until smooth. Allow batter to rest for 30 minutes at room temperature before using. Trim fish, lightly dust with seasoned flour. Dip fish fillets in batter, shake of excess, then submerge in hot oil. Fry until golden, 2-3 minutes depending on size. Serve with fries and lemon wedges.
