1/4 cup whole wheat flour
1/2 cup unbleached white flour
1/4 cup wheat germ
1/4 cup brown sugar
1/2 tsp salt
2 tsp baking soda
2 tsp double-acting baking powder
1/2 cup low-fat buttermilk
2 tbl diet margarine
Instructions:
Instructions: Preheat oven to 375F. In a bowl, stir together all dry ingredients in a large bowl. Stir in buttermilk and margarine until batter is blended. Dont overmix - batter should still be lumpy. Fold in currants or raisins. Spoon batter into greased and floured 8-inch round pan. Do not smooth out the batter. Bake for 40-45 minutes or until toothpick comes out clean. Let bread cool in the pan for 10 minutes, then turn out on a wire rack.
