1/2 tsp active dry yeast
3/4 cup water lukewarm
2 tsp olive oil
1 cup all-purpose flour unbleached
1/2 cup whole wheat flour
1/4 cup wheat germ
1/4 cup semolina flour
3/4 tsp salt
Instructions:
Instructions: 1. In a large bowl, dissolve the yeast in the water and oil and let stand until
it bubbles, about 10 minutes. Slowly stir in 3/4 cup all-purpose flour, wheat
germ, semolina, and salt into the yeast mixture. Turn the dough out onto a
floured work surface and knead until smooth, about 15 minutes. Dough should be
moist, but not sticky. Add remaining flour, if needed.

2. Spray a large bowl with Pam, put in dough and cover with plastic wrap or a
damp towel. Refrigerate overnight, or let rise in a warm place until doubled in
size, about 1 hour. Proceed with directions above for stretching, assembling and baking pie.
