Instructions: Line 8 muffin tins with paper muffin cases or grease the tiny well.
Place the raisins in a bowl pour the orange juice over and leave to soak for 1hour or overnight. Place the orange rind in a bowl with the next flue ingredients and mix together. Make a well in the centre. In a separate bowl mix the egg milk and oil then pour into the flour mixture. Drain the raisins reserving 1 tbsp juice and stir into the mixture with the bananas. Dont over mix. Fill each muffin case two thirds full. Bake on the bottom runners of the roasting oven for 15 to 20 minutes or until a skewer inserted into the centre comes out clean. Transfer the muffins to a wire rack to cool slightly. While the muffins are baking prepare the topping. Gently heat the orange marmalade with the reserved orange juice in a saucepan on the simmering plate until melted. Simmer for 1 minute then add the banana chips and chopped walnuts. Spoon on top of the muffins. Serve while still warm. These mums are good for those on cholesterol lowering diets. Makes 8 Email this Recipe:
