1/4 lb butter
1/4 lb sugar
1/2 tsp Lemon rind, grated
1 x egg
2 tbl milk
10 oz wholemeal self-raising flour
1 pch salt

1 tbl butter
1 tbl sugar
Instructions:
Instructions: Oven:350 F
Cream the butter, sugar, and rind, add beaten egg, milk, flour, and salt. Roll out 1/4 inch thick, cut out rounds and place on a lightly greasd baking tray Bake 350 F until pale brown and crisp.

Join together when cold with cream filling.

Cream filling: beat butter and sugar until sugar is dissolved. Add a few drops of the lemon essence.
