Start with good pork chops. Preferably bone-in, 1" thick for company. (You can use cheap, thin chops if its just family.) About 24 hours before youre ready to cook, put the pork chops to soak in a covered container (or sturdy Zip-lock) in a well-blended marinade made up of: (not too sweet. cheap sherry is fine. NOT cooking sherry, however) To cook, grill directly over coals or gas flames, basting frequently with the marinade, until well done. Discard leftover marinade.
