3 lb beef eye of round
1 x orange carrot
1 x yellow carrot
1 x celery root
1 x leek
1 x parsley root
----------------- APPLE HORSERADISH SAUCE ----------------
3 x apples - (to 4)
Juice of 1/2 lemon
3 tbl finely-grated horseradish
1 tsp vinegar
Sugar to taste
Instructions:
Instructions: Tafelspitz: Bring water to a rolling boil in a pot large enough to fully submerge beef. Put beef and the above ingredients (thoroughly cleaned, but whole) into the boiling water. Simmer 1 1/2 hours until done. Remove and cut against beef fibers.

Apple Horseradish Sauce: Sprinkle peeled apple quarters with lemon juice. Bake at 350 degrees about 25 minutes until soft. Puree soft apples with horseradish and vinegar. Add sugar and salt to taste.
