Ingredients:
Amount Ingredient
2 tbl olive oil
1 sm onion, sliced thin
1 cup chopped fresh pineapple
2 x cloves garlic, chopped fine
2 tbl chopped ginger
4 tbl chopped oregano
3/4 lb very firm tofu, cut into large bite-size pieces
2 tbl soy sauce
6 cup wild spring greens (or a purchased greens mix)
1/2 cup chopped fresh green onions
Instructions:
Instructions: Over medium heat in a wok or large saute pan, heat oil and add onion, cooking it until slightly softened. Add pineapple, garlic, ginger, oregano, tofu and soy sauce. Cook until tofu is slightly browned. Add greens and mix thoroughly. Add green onions and chilies, mix and serve.
