Ingredients:
Amount Ingredient
2 lb wild mushrooms, such as shiitake,
portobello or oysters
2 tbl olive oil
Salt and pepper, to taste
8 cup mixed field greens, such as endive,
radicchio, frisee, red oak leaf or
spinach
6 oz Boursin cheese, crumbled
2 x roasted red bell peppers, julienned
Instructions:
Instructions: Toss the mushrooms with the olive oil, salt and pepper in a small bowl.

Grill over medium-hot coals until brown or done to taste. Place in a bowl.

Chill, covered, in the refrigerator.

Combine the mixed greens, cheese and red peppers in a salad bowl and mix gently.

Drizzle with the Balsamic Maple Vinaigrette, tossing to coat.
