Instructions: Combine pork, wild rice, pepper, and salt in a mixing bowl. Mix well. Shape into four 3/4-inch-thick patties.
For a charcoal grill, place patties on the grill rack directly over medium coals. Grill, uncovered, for 14 to 18 minutes or until an instant-read thermometer inserted into side of a patty registers 160 degrees, turning once. For a gas grill, preheat grill. Reduce heat to medium. Place patties on the grill rack; cover and grill as above. Serve on buns topped with your choice of condiments. This recipe yields 4 servings. Comments: To get 1 cup of cooked wild rice for these rice-studded patties, rinse 1/3 cup wild rice; cook, covered, in 1 cup water in a small saucepan about 40 minutes or until most of the water is absorbed.
