1 cup sliced fresh mushrooms
2 tbl butter
2 cup boiling water
1/4 cup dry white wine
1/2 cup regular brown rice
1/2 cup wild rice
1/2 cup chopped onion
1/2 med yellow pepper chopped
2 x ripe plum tomatoes chopped
1 tsp salt
1/4 tsp freshly-ground black pepper
Instructions:
Instructions: In saucepan over medium-high heat cook mushrooms in butter for 5 minutes, stirring occasionally.

In an 8- by 12-inch foil pan combine cooked mushrooms, water, wine, brown rice, wild rice, onion, yellow pepper, tomatoes, salt, and pepper; add cumin, if desired. Cover with foil; seal tightly.

Place pan in center of cooking grate. Grill 1 hour or until rice is tender, stirring once halfway through cooking time (reseal tightly after stirring).

This recipe yields 4 servings.

Comments: White wine, yellow pepper, and plum tomatoes add elegance to an indispensable side dish.
