Ingredients:

1 jar (7.4 oz) chestnuts
2 cup uncooked wild rice
2 tbl oil
1 x onion, diced
3 x ribs celery, diced
1 lb pork sausage
1/2 tsp each salt, fennel seeds, dried sage, pepper
Instructions:
Instructions: Preheat oven to 425 degrees. Cut slice in each chestnut shell, place on baking sheet. Bake 20 min. Cool, peel. Halve each chestnut, set aside. Cook rice, set aside. In skillet heat oil and onion and celery cook until softened.

Add sausage, salt, seeds, sage, pepper, thyme. Cook until sausage in cooked through and browned. In bowl combine sausage mixture with reserved chestnuts and rice. Cover, refrigerate until ready to stuff turkey.

Makes 12 servings.
