Instructions: Rice for salad can be cooked and dressing prepared the day before.
Add rice gradually to medium saucepan of boiling water, boil rapidly, uncovered, for 5 mins. Remove from heat and allow rice to stand for 1 hour; drain. Cook the rice in extra boiling water, uncovered, for 15 mins or until just tender; drain again. Combine rice, ham, shallots and dressing, cover and refrigerate.
