Instructions: Grease a 13- by 9-inch baking pan or dish. In a large saucepan, melt butter over low heat. Whisk in flour. Increase heat to medium and add mushrooms, celery, broth, milk, egg yolks and sherry. Increase heat and bring to a boil; stir in turkey, salt and pepper. Pour into greased baking pan and sprinkle with Parmesan cheese on top and set aside.
Preheat oven to 400 degrees. In a large bowl, combine crust ingredients. Stir vigorously with a wooden spoon about 30 seconds until a soft dough forms. Spoon herb dough over turkey filling to create a cobblestone effect. Bake 30 to 35 minutes or until toothpick inserted in center comes out clean. This recipe yields 8 to 10 servings.
