1/4 cup Butter or margarine
1/2 tbl Flour
1/2 lb Fresh mushrooms chopped
4 x Celery stalks thinly sliced
1 cup Turkey or chicken broth
1 cup Milk
2 x Egg yolks well beaten
2 tbl Sherry
1/2 cup Cubed, cooked wild turkey
Salt to taste
Freshly-ground black pepper to taste
1/4 cup Grated Parmesan cheese

1 cup Flour
1 cup Yellow or white cornmeal
1/2 tsp Baking powder
2 tbl Sugar
1 tsp Italian seasoning
1 pch Salt
1/4 cup Butter or margarine melted
1/2 cup Milk
Instructions:
Instructions: Grease a 13- by 9-inch baking pan or dish. In a large saucepan, melt butter over low heat. Whisk in flour. Increase heat to medium and add mushrooms, celery, broth, milk, egg yolks and sherry. Increase heat and bring to a boil; stir in turkey, salt and pepper. Pour into greased baking pan and sprinkle with Parmesan cheese on top and set aside.

Preheat oven to 400 degrees.

In a large bowl, combine crust ingredients. Stir vigorously with a wooden spoon about 30 seconds until a soft dough forms. Spoon herb dough over turkey filling to create a cobblestone effect. Bake 30 to 35 minutes or until toothpick inserted in center comes out clean.

This recipe yields 8 to 10 servings.
