1 x english (hothouse) cucumber thinly sliced
1 x salt for sprinkling
4 x scallions trimmed and thinly sliced
8 x red radishes thinly sliced
1 sm head iceberg lettuce
dressing
1/2 cup plain yogurt
1 clv garlic minced
1 tsp honey or sugar
1/2 tsp minced fresh tarragon. or 1/2 tspn dried tarragon
2 tbl olive oil
1/2 tsp salt
Instructions:
Instructions: In a colander layer the cucumber slices with salt and let stand about 30 minutes.

Pour off liquid that has formed and press cucumbers firmly.

In a large bowl toss cucumbers with scallions and radish.

Cut the lettuce in half through the core. Slice lettuce in 1/2 inch shreds and toss with cucumber mixture.

Combine all dressing ingredients and whisk to blend.

Toss with cucumber salad.

Serve immediately.

Use a sprinkle of salt and a firm hand to press out the liquid and help soften the slices. Those who prefer their cucumbers crisp can soak the slices in ice water prior to serving.
