8 x baby apples such as Coxs
1 x juice of half a lemon
500 gm light muscovado sugar
100 gm butter
1 tsp cinnamon powder
Instructions:
Instructions: Preheat the ovento 180C/350F/Gas Mark 4.

Peel the apples and put into a bowl of acidulated water (mixed with the lemon juice) to prevent browning.

Next heat the sugar and 1 tbsp water in a small saucepan over a gentle heat stirring.until the sugar has melted then allow it to build up enough heat to caramelise and turn a deep golden brown. Stir in the butter.

Drain the apples and pack into a deep dish or tin sprinkle with cinnamon and pour over the caramel. Cover loosely with foil and bake for 45 minutes or until the apples are very tender.

Serve in bowls on pillows of soft whipped cream.

This recipe is a tarte tatin without the pastry (just apples and toffee caramel) cream.
