Instructions: Cut each celery stick into three.
Dice the bacon. Fry the bacon in its own fat until it begins to run then add the onion and cook for about 5 minutes stirring occasionally. Stir in the celery and cook for a further 2 to 3 minutes. Add the stock season with mace salt and pepper and simmer gently for 25 to 30 minutes until the celery is tender. Spoon into a serving dish garnish with chopped parsley and serve immediately.
