Instructions: 1. In 3 1/2- to 4-quart crockpot, combine all ingredients except parsley; mix well.
2. Cover; cook on low setting for 7 to 9 hours. 3. Just before serving, stir in parsley. 6 (1 1/2 cup) servings. INGREDIENT INFO: There are 2 varieties of sweet potatoes. One type has pale yellow flesh with a crumbly dry texture similar to that of a white potato. The other type has darker orange flesh that is sweet and moist. For the prettiest color and richest flavor, use an orange-fleshed sweet potato. RECIPE VARIATION: To make a vegetarian casserole, omit the sausage and use vegetable broth in place of chicken broth.
