Instructions: Wash and pick over the rocket and dandelion leaves.

Separate the trevise or radicchio and chicory leaves from their stalks and check for dirt.

Mix all the leaves together in a bowl and toss with the dressing.

In December and lanuary before the flowers form on the dandelion pick the small centre leaves from wild plants.
