Instructions: Parboil chuck in water for 1 hour, drain, reserving the broth. Bone the meat. Add onion, green pepper, parsley, salt, pepper, and flour to the cooking broth and cook, stirring, until thickened. Measure 3 cups; add water if needed. Add the meat and put into a 2-quart deep baking dish. Top with biscuits or biscuit topping. Bake at 400 degrees for 30 to 40 minutes.
