Instructions: Brown chicken parts in oil. Add garlic and cook till softened. Remove if you wish.
Toss vegetables with dressing and herbs. Add black pepper to taste, if desired. Spray a large casserole dish with non-stick spray. Pour rice into casserole, evening it over the bottom. Spread the vegetable mixture over the rice. Be sure to add all the dressing. Arrange the chicken, nestling it into the mixture so the dish is roughly even. Pour the stock over all. Cover. Bake for about 1 hour to 1 hour and 15 minutes in a 350 degree oven. Rice should be done and chicken run clear when pierced. Note: No salt is added because of the dressing. It should be enough. Also, chicken can be drained before adding to the casserole, but it is better if you add at least a tablespoon of the drippings with the stock.
