Instructions: Season your potatoes as above, seasoning them to taste. Cook them over low heat until they "candy." Be sure to stir often to prevent burning. You may need to add a very small amount of water or additional butter. Serve hot as a side dish. They can be placed in an oven dish and baked. Top with large marshmallows, if desired, just before serving. They can be mashed and topped with marshmallows or topped with a meringue after cooking down. Brown meringue lightly as you would for a pie. Some people mash them, add a couple of eggs and make a souffle or pie.
Note: Pick red fleshed sweet potatoes, (or rarer yams) if you can find them - they are sweeter. It is easy to scrub raw sweet potatoes with a brush under cold running water. Bring them to a boil in water to cover to which you added 1 teaspoon table salt. Cook until easily fork tender. Cool in cold water. Peel. Continue as above. Made with Canned (or fresh) Yams.
