Instructions: Drain yams and mash. Combine with Spam, egg yolk, and pepper. Shape mixture into 6 balls. Roll in bread crumbs; dip in beaten egg. Roll in bread crumbs again. Refrigerate at least 1 hour for easy frying.
Heat 3 inches shortening to 350 degree; slip in croquettes. Cook 3 to 4 minutes, until browned. Drain on paper towels. Serve with Pineapple Sauce. Pineapple Sauce: In small saucepan, stir together water and cornstarch until smooth. Add pineapple, sugar, and cloves. Cook and stir over medium heat until mixture thickens and boils.
