Ingredients:
Amount Ingredient
Lettuce, parsley, cucumber, etc. for garnish.
2 tbl lemon juice
1 tsp chilli powder
2 tbl stock/broth
1 tsp sugar
2 tbl fish sauce
4 x fish balls (from an Asian/Oriental store)
4 lrg prawns (shrimp), shelled and deveined.
4 x crab claws
4 x pieces sliced squid
2 x lime leaves, fine sliced
1 x shallot, finely chopped
1/2 sm onion
Instructions:
Instructions: Prepare a serving dish with the lettuce and other garnish items; set it aside.

Combine lemon juice, stock, chilli powder, sugar and fish sauce in a pan. Bring it to a boil while stirring. Add fish balls, prawns, crab and squid, stir and cook a minute or two till the raw meat is cooked. Take off heat, add remaining ingredients. Mix all ingredients well, turn into the prepared dish and serve. and my own variations for the recipe above:

Glass Noodle Salad
Add 2 oz. cooked, slightly cooled cellophane noodles for this recipe + red chillis.

Substitute butter lettuce or thinly sliced cucumbers, to taste, for lettuce.

Beef and seafood salad -
add stir-fry style beef (about 4 oz); marinate in citrus and soy, red pepper flakes.
