Instructions: 1. Peel the sweet potatoes(yams) and cut them into 1/2 inch cubes
2. Heat the oil in a large skillet over medium heat. Add the sweet potatoes and stir them for a minute just to get them hot. 3. Add the lemon juice and water, reduce the heat, cover the skillet, and simmer gently until the sweet potatoes are just tender, about 15 minutes. Stir the sweet potatoes every now and them to make sure they dont stick to the bottom of the skillet. If they do begin to stick, add another tablespoon of water and continue to cook. 4. While the sweet potatoes are cooking, core, peel, and cut the apples into 1/2 inch cubes. Trim and thinly slice the scallions, including 2 inches of the green tops. 5. When the yams are tender, add the apples and simmer covered until heated through, about 5 minutes. Stir in the scallions and season to taste with salt and pepper. Email this Recipe:
