Instructions: Zap a few yams till soft. Scoop out the flesh (pardon the expression) and mash. Mix with slightly drained crushed pineapple, a dash or two of salt, brown sugar and cinnamon to taste. Put into a baking dish and zap or bake till set.
For a fancier treatment, the yam shells can be restuffed with the mixture instead of using a baking dish. (Leave a thicker shell when scooping out the yams.) Run the tines of a fork over the tops to decorate. Email this Recipe:
