8 x eggs
5 cup finely chopped pecans
2 cup sugar
1 cup flour
1 tsp salt
4 tsp baking powder
1 tbl vanilla
TOPPING
1/2 qt whipping cream or dessert topping
1/4 cup chopped pecans
Instructions:
Instructions: FOR CAKE: Beat eggs at high speed for 5 minutes. Add sugar, vanilla, flour and baking powder and beat another 5 minutes. Add pecans. Beat at low speed for one minute to moisten well. Pour into 3 greased and paper-lined 9 inch cake pans. Bake at 350iF for about 15-20 minutes. Remove immediately from pans to wire cake racks and cool. Cake may fall slightly but this is natural.

FOR TOPPING: Whip powdered sugar and cream until stiff. Frost layers, top, and sides of cake and sprinkle generously with pecans.
