Instructions: In a 5 quart heavy saucepan with tight fitting lid, saute 6-8 pieces of chicken for approximately 15 minutes, turning frequently. Add water and bring to a boil. Add yellow rice and let boil for 1 minute. Add peas and corn and cover tightly, reduce heat to simmer and cook undisturbed for 20-25 minutes.
