Instructions: My favorite way to cook yellow squash is to saute some Vidalia (sweet)
onions and garlic in vegetable broth. Then I toss in some thinly diced yellow squash. Season it just with a little salt and black pepper to taste. (I use a lot of black pepper, onions and garlic.) You can also boil or steam the onions and squash instead of sauteing, using the same ingredients. It should be soft and tender when cooked - true "Southern style." :) add a little skim milk and mash the squash. This is the way my mamma fixed it. Email this Recipe:
