2 cup low-fat plain yogurt, (or nonfat)
1/3 cup frozen raspberry juice concentrate, partially thawed

Instructions: Yogurt cheese makes a rich and creamy dip for fresh fruit-youll find it hard to believe that its almost fat-free. For make-ahead fruit platters, grapes, strawberries and fresh apricots work well. Apples, pears and bananas should be sliced just before serving.

Place yogurt in fine mesh strainer lined with cheesecloth and set over medium bowl; cover with plastic wrap. Refrigerate 24 hours. The whey will drop through cheesecloth leaving a mild sweet cheese in strainer.

Transfer yogurt cheese to serving bowl and swirl raspberry juice concentrate into cheese. Cover and refrigerate until ready to use. Serve with fresh fruit.
