Ingredients:

1 cup flour, plain
1/2 tsp salt
2 x eggs
1 cup milk
Instructions:
Instructions: Sift flour and salt into a bowl, make a well in the center, add eggs and milk and beat until you have a smooth batter. Place in the refrigerator and allow mixture to stand for 1/2 hour.

Put 2 tsp dripping into individual pattie tins and place in a hot (390F) oven until oil is almost smoking.

Remove from oven and pour in batter to almost fill. Mixture should sizzle. Return to hot oven and bake until well risen and golden brown. Place on floor of oven and allow to cook a furthur 5 minutes to dry slightly.

Serve warm with roast beef.

Makes about 12.

Note:
Batter can also be cooked in a large roasting dish using the same method.

The most important thing to remember when making Yorkshire pudding is that the batter should be very cold and the baking tray or pattie tins and the oil should be very hot.
