Instructions: In a large pot combine the broth, water, potatoes, garlic and salt. Bring to a boil. Reduce heat to medium, cover and simmer until potatoes are very tender, about 30 minutes.
Working in batches, puree the soup in a blender or food processor until smooth. Return to pot. Add half-and-half and bring to a simmer. Stir in the pepper and chives. (The soup can be prepared 1 day in advance. Cool, cover and refrigerate. Rewarm over low heat, stirring frequently.) This recipe yields 6 servings. Email this Recipe:
