1 lb hamburger
1/3 cup chopped onion
1 clv garlic
1 x (16 oz.) can tomatoes (or 2 cups tomatoes w. tomato juice as necessary)
3/4 cup rice
2 tbl Worcestershire sauce
Salt and pepper to taste
1 cup shredded Cheddar cheese
1 lrg zucchini, unpeeled, sliced (or 2 medium, or 5 small)
1/2 cup Monterey Jack cheese (OR mozzarella or cream cheese)
Instructions:
Instructions: Brown beef, onion and garlic. Add tomatoes, rice, Worcestershire sauce, salt and pepper. Cook until rice is tender. Add 1/2 cup Cheddar cheese. Cook zucchini in water until tender. In a 2 quart casserole dish

(9X13dish), layer meat mixture with zucchini, Monterey Jack cheese (or mozzarella or cream cheese) and sour cream. Top with remaining Cheddar cheese and bake in a 350 F. oven for 25 to 30 minutes. Let set for 5 minutes before serving.
