Ingredients:
Amount Ingredient
1/2 cup all purpose flour
1/2 cup whole wheat flour
1 tsp baking powder
1 tsp cinnamon
1/2 tsp baking soda
1/4 tsp salt
4 x egg whites
2/3 cup sugar
1/4 cup oil
1/2 tsp vanilla
1/2 cup shredded zucchini/carrot
Instructions:
Instructions: Sift together flours, baking powder, cinnamon, baking soda and salt.

In a large bowl whisk together egg whites, sugar, oil, and vanilla.

Mix in dry ingredients until combined. Stir in zucchini and raisins (if desired), spoon mix into prepared muffin cups.

Bake at 375F for 20 min. or until toothpick comes out clean.

Makes 1 dozen.
