Instructions: Brown chicken on one side in nonstick skillet. Add the onion, green pepper, and celery. Saute for a short while, adding about 1/4 cup of water. Move the chicken around a little to move the flavor around.
Turn the chicken over and add the zucchini, tomatoes, and spices. Simmer for about 20 min., stirring alittle now and then. As you stir, cut the chicken with a spatula into bite-size pcs. The breading on the chicken will thicken the sauce as you simmer and move it around. When all is tender and thickened somewhat, serve on a bed of rice. Email this Recipe:
