Ingredients:
Amount Ingredient
4 cup grated, unpeeled zucchini (about 2 medium)
1 sm onion, grated
1/2 cup Parmesan cheese (either freshly grated or from the green can)
2 tbl fresh, chopped parsley
1 cup Bisquick baking mix
1/2 tsp ground nutmeg
1/2 tsp salt
1/4 tsp black pepper
Tabasco sauce to taste
4 lrg eggs, beaten
Instructions:
Instructions: Heat oven to 350:. Grease a 9x13 inch baking pan. Combine all ingredients EXCEPT oil and eggs, mix lightly. Mix the oil and eggs together then add to the zucchini mixture, mix until thoroughly blended. Pour into prepared pan, smooth the top. Bake until the edges and golden brown, about 25 minutes. Cool 10- 15 minutes before cutting into squares. Can be served warm or at room temp.

Makes
about 48 squares. These also freeze well, just defrost then warm them in the oven.
