4 qt squash, cut in 1/2" cubes
8 x white onions, sliced
2 x green bell peppers
2 x cloves garlic, sliced
2 x red bell peppers, optional
5 cup sugar
3 cup vinegar
1/2 tsp celery seed
1/2 tsp turmeric
Instructions:
Instructions: If squash is tender, dont peel it. Wash and slice in 1/2" inch cubes. Add onion, peppers, and garlic. Mix well. Add 1/4 cup salt and cover with ice and let stand 3 hours. Drain well. Mix remaining ingredients and pour over squash mixture. Heat to a boil and let boil 10 minutes. Pack hot into hot jars.

Makes 8 pints.
