Instructions: Cut the zucchini in half lengthwise and scoop out the pulp and seeds. Chop the pulp. Drain and squeeze as much moisture as possible from the pulp. Set aside. Heat a skillet and add the Italian Sausage meat. Cook and crumble it until it is cooked through. Drain off any fat. Add the onion, parsley, basil and thyme. Saute for 5 minutes. Remove from the heat and add the bread crumbs, 2 Tbsp. of the parmesan, egg and the salt and pepper. Mix well. Preheat the oven to 350. Fill the zucchini "boats", and place in a greased baking dish. Sprinkle with the remaining parmesan cheese. Bake uncovered for 20 minutes.
