Instructions: In skillet, melt butter, saute onion and garlic. Line bottom of shallow 2-qt. baking dish with 3 rows of 6 slightly overlapping crackers. Sprinkle w. 1/2 ea. of the Cheddar, Mozzarella, and onion. Top with half of the Zucchini and 1 T. Parmesan. Repeat. Arrange tomatoes around the edge, place 4 crackers in overlapping line down center. Combine milk (Skim is fine),eggs, basil and oregano. Add remaining Parmesan. Bake at 350F for 40 min.
