6 x eggs
1/4 cup milk
1/4 cup grated Parmesan cheese
1/2 tsp salt
Freshly ground black pepper
3 tbl olive oil
2 med -sized onions, diced
4 med -sized tomatoes, peeled, seeded and diced (fresh or canned, and drained)
1 tbl minced fresh basil
Instructions:
Instructions: Preheat oven to 325 degrees. Butter a pie plate (If your plate is glass, set the oven at 300 degrees). In a large bowl, beat together the eggs, milk, Parmesan cheese, salt and pepper. Heat the oil in a large skillet over medium heat. Add the onions and saute for 5 minutes. Add the drained tomatoes and basil and saute for 10 more minutes (no less), tossing frequently. Add the zucchini and cook until tender yet still slightly crisp, about 5 more minutes.

Add this mixture to the eggs and stir to blend. Pour into the prepared pie plate and bake for 15 to 17 minutes, or just until the frittata is set. Dont overcook it because it continues to cook on its way to the table. Cut into wedges.
