Ingredients:
Amount Ingredient
4 slc bacon, cut into 1 inch pieces
5 med zucchini, sliced
2 med summer squash, sliced
1 sm onion, chopped
3 x cloves garlic, chopped
1 x (15-ounce) can stewed tomatoes
1 x (15-ounce) can whole kernel corn, drained (optional)
1 lb shrimp (optional)
2 cup diced chicken breast (optional)
Instructions:
Instructions: Fry bacon in a skillet for about 3 minutes, or until half done.

Saute onions, garlic and squash in bacon grease until onions are clear, about 5 minutes on medium heat. Add stewed tomatoes and bring to a boil.

Immediately turn down and simmer for approximately 15 minutes. Whole kernel corn or other optional ingredients can be added near the end of cooking period to warm through. Best served over steamed white rice.

Serves 8.
