Instructions: Saute garlic and zucchini in hot oil in a large skillet 8 minutes or until tender. Stir in diced tomatoes and next 3 ingredients; bring to a boil. Reduce heat, and simmer, stirring often, 5 minutes. Toss with pasta and Parmesan cheese. Serve immediately.
Makes 6 servings. For Eggplant With Pasta, substitute 1 medium eggplant, peeled and chopped, for 3 large zucchini. Note: Any Crisco Oil product may be substituted. Email this Recipe:
