Ingredients:
Amount Ingredient
2 x garlic cloves, sliced
3 lrg zucchini, chopped
3 tbl CRISCO Vegetable Oil
1 x (14-1/(2-ounce) can diced tomatoes with green pepper and onion, undrained
1/3 cup minced fresh parsley
1/4 tsp salt
1/4 tsp pepper
12 oz fusilli or rotini, cooked
Instructions:
Instructions: Saute garlic and zucchini in hot oil in a large skillet 8 minutes or until tender. Stir in diced tomatoes and next 3 ingredients; bring to a boil. Reduce heat, and simmer, stirring often, 5 minutes. Toss with pasta and Parmesan cheese. Serve immediately.

Makes 6 servings.

For Eggplant With Pasta, substitute 1 medium eggplant, peeled and chopped, for 3 large zucchini.

Note: Any Crisco Oil product may be substituted.
